Healthy Rainbow Sandwiches

With this recipe your little ones can actually eat a Rainbow! It's super easy and fun for kids to make too. Rainbow sandwiches are perfect for kids parties, lunch boxes and picnics.

How to make your Rainbow sandwiches - the following quantities will make approximately one whole sandwich.

Ingredients -

4 x carrots

2 x large handfuls of spinach

100g of frozen peas

two cooked beetroots

150g of soft cream cheese

4 x slices of bread (wholemeal)

Method  -

1) Peel the carrots and slice in to disks - then steam/boil for approximately 20 minutes until tender. Add the spinach leaves and peas to the same pot for another 2 minutes.

2) Drain the Veg and allow to cool

3) Blend one third of the soft cheese with the carrots for the orange spread, then a third with the spinach and peas for the green spread and finally a third with the cooked beetroot.

Place them in pots and allow to firm up in the fridge.

4) Once firm, spread 3 slices of bread, one with each colour of spread. Place the slices on top of each other with the spread face up adding a plain slice on top. Carefully cut the crusts off and in to little squares, triangles or any shape you like.

These spreads can be made in advance, kept in the fridge for a couple of days or frozen for one month.
